For anyone that knows me IRL, you’ll know that I’m the most anxious and shittiest cook ever! I’ve never been the biggest meat eater but this year I’ve tried to make a conscious effort to make semi-made from scratch veggie meals that I can look forward to.
Delicious and tasty! And ever so filling. This quesadilla consists of cheese and sweet potatoes. But you can also add peanut butter or black beans.
A cauliflower base makes all the difference to any pizza of choice. Choose your toppings!
My absolute favourite. Sweet potato, courgette and cheese bites with some chilli sauce is the ultimate meal! Add different spices for a different flavour.
This is a bit of a cheat one, as it’s not entirely from scratch! Substitute pasta sheets for butternut squash sheets and use Quorn mince.
